The only way to ensure that the prawn cooks evenly is to spread them out across the bottom of the pan. This way, they are all exposed to the heated surface of the pan. However, try not to overcrowd your pan as this will lower the temperature, it’s better to cook in small batches.
Keep an eye on the crevice in the prawn’s back where the vein was removed. Keep your focus on the thickest section of the prawn (the other end from the tail), and when the flesh at the base of that crevice becomes transparent to opaque, the prawn is done.

- 500 gms Licious Tiger Prawns
- 200 gms Mayonnaise
- 50 gms Tomato ketchup
- 1 tbsp Worcestershire sauce
- 1 tbsp Lemon Juice
- 1 tsp A generousof paprika
- 1 piece ripe avocado
- 2 pieces diced lettuce
- 1 tsp cayenne pepper to finish

- Bring a big pot of water to a boil, then add the prawns.
- Cook for 3-4 minutes, or until the prawns are pink and cooked through.
- Once cooked, drain the prawns and place them on a dish to cool.
- Meanwhile, in a mixing dish, combine the ketchup, mayonnaise, Worcestershire sauce, paprika, and lemon juice.
- Sprinkle it with pepper and salt to taste.
- When the prawns become cool enough to touch, combine them with the sauce.
- In cocktail glasses, put avocado slices and divide the grated lettuce among them.
- Serve with the prawn cocktail mix and a sprinkle of cayenne pepper on top.
- Serve right away.
