  1. Thoroughly wash the chicken breast and pound to flatten the chicken. Season with garlic powder, salt and pepper and sauté in 2 tsp olive oil on medium heat until it cooks and turns brown on all sides. Remove from the pan and cool for 5 minutes. Cut the breast lengthwise into strips.
  2. In a salad bowl, add lettuce, tomatoes, cucumber, mango, avocado, onion and coriander. You can mix everything or arrange the veggies on the spread lettuce.
  3. Whisk all the dressing ingredients thoroughly in a small mixing bowl until everything is combined. If using a mason jar, cover with its lid and shake well. Check the taste for salt and drizzle over the salad. Garnish with almonds and serve with fries or chips.
