Add a Twist to Your Easy 3-Step Summer Chicken Salad
Ingredients
- 450 Gms or 2 medium Boneless Chicken Breast.
- 1 head romaine lettuce rinsed, dried and chopped
- ½ cup Chopped Cherry Tomatoes
- ½ Diced Cucumber
- 1 Mango peeled, pitted and diced
- 1 Avocado pitted, peeled and diced
- ½ Small Onion sliced
- ¼ cup Coriander roughly chopped
- ½ cup almonds toasted and sliced
- 2 tsp olive oil
- ½ tsp Garlic Powder
- Salt and pepper to taste
- ½ cup Extra virgin olive oil
- 3 tbsp apple cider vinegar
- 2 tsp Mustard Sauce/Dijon Mustard
- 2 tsp honey
- 1 tsp minced garlic
- 1 tsp Sea Salt
- ¼ tsp Black pepper powder
Instructions
- Thoroughly wash the chicken breast and pound to flatten the chicken. Season with garlic powder, salt and pepper and sauté in 2 tsp olive oil on medium heat until it cooks and turns brown on all sides. Remove from the pan and cool for 5 minutes. Cut the breast lengthwise into strips.
- In a salad bowl, add lettuce, tomatoes, cucumber, mango, avocado, onion and coriander. You can mix everything or arrange the veggies on the spread lettuce.
- Whisk all the dressing ingredients thoroughly in a small mixing bowl until everything is combined. If using a mason jar, cover with its lid and shake well. Check the taste for salt and drizzle over the salad. Garnish with almonds and serve with fries or chips.
