- 6 Eggs
- 1 Large onion finely chopped
- 2 Tomatoes finely chopped
- 2 Green Chilies finely chopped
- 1/2 tsp Ginger Paste
- 1/2 tsp Garlic paste
- 1 tsp Red Chili Powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- Salt - to taste
- 2 tbsp oil
- Fresh Coriander Leaves for garnish

- Heat oil in a pan and add the chopped onion. Fry until golden brown.
- Add the ginger and garlic paste and fry for a few seconds.
- Add the chopped tomatoes, green chillies, red chilli powder, coriander powder, turmeric powder, and salt. Fry until the tomatoes are soft.
- Crack the eggs into a mixing bowl, making sure to remove any minute egg shells that might enter the bowl. You can keep the egg yolks intact or beat the eggs with salt.
