  1. Place a pan on medium high heat and add olive oil to it. Then, add the chicken breasts to the pan. Sprinkle some salt and pepper for taste. Cook them for 5 minutes on each side until they are thoroughly cooked. Set them aside in a plate. Once the chicken comes back to room temperature, shred it.
  2. In a large bowl, add the salad ingredients such as, olive oil, shredded chicken, diced avocados, boiled corn, finely diced onions and coriander. Then, squeeze some lemon juice and sprinkle salt and pepper for taste. Toss the salad using two large spoons. Make sure you combine all the ingredients well.
