How to prepare the garam masala:
  1. Roast all the dry species
  2. Once roasted properly, put them all in a grinder and finely grind them.
Mutton marination steps:
  1. Add turmeric powder, chilli powder and ginger-garlic paste to the mutton.
  2. Add curd and garam masala and mix it properly so that all the pieces of mutton are covered with the marinade.
  3. Cover it with a lid and place it in the refrigerator for at least an hour.
Awadhi mutton biryani recipe:
  1. Take the marinated meat out of the refrigerator. Once it comes to room temperature, season it with salt.
  2. Grease a handi using mustard oil or ghee. Transfer all the meat to the handi.
  3. Cook the meat on a low flame while tossing it continually.
  4. Cover with a lid and let it simmer for another 30 minutes.
  5. Now, start layering the mutton with cooked rice and sprinkle saffron milk all over it.
  6. Add a pinch of salt, roasted onions, garam masala and ghee over it.
  7. Cover the handi with a lid and place something heavy over it. Make sure the flame is on a low setting.
  8. Cook it for at least 30 minutes and serve hot.
