Instructions
  1. In a large pot, melt the butter over medium heat.
  2. Add in the onions, celery, and carrots. Cook for five minutes until the vegetable wilts. Add the garlic and cook for an additional minute.
  3. Add in the flour and stir well to combine. Cook for one minute.
  4. Pour the chicken stock and evaporated milk and stir to combine well.
  5. Bring to a boil and add thyme, salt, black pepper and the shredded chicken. Let the soup simmer uncovered.
  6. In a large bowl, add the flour, baking powder, thyme, salt and pepper and whisk well. Make a well in the centre and pour in the butter and milk.
  7. With a rubber spatula or wooden spoon, stir the mixture to form a dough.
  8. Using a large cookie scoop, scoop out a portion of the dough and drop it directly into the simmering soup.
  9. Once you’ve dropped in all the dumplings, press them down gently so the soup runs over them.
  10. Cover the pot and lower the heat to allow the soup to simmer.
  11. Cook for about 15 minutes until the dumplings are cooked through. Make sure to stir the soup and dumplings gently at intervals.
  12. Plate and serve hot. Enjoy!
