What is Egg Chill?
Egg chilli or Anda chilli is an Indo-Chinese spicy dish that people cook with boiled eggs dipped into a batter made with either all-purpose flour or cornflour and then deep-fried. Red chillies, ginger, and garlic are then sautéed along with onion, fresh green chillies, and bell peppers. You can add different sauces like red chilli sauce, soya sauce, and tomato sauce to the dish. The egg chilli recipe can be cooked as a dry starter or a yummy gravy for the main course. You can eat this recipe as is or team it up with fried rice, noodles, or just steamed rice for a satisfying meal.

Ingredients
- 3 tablespoons all-purpose flour or cornflour
- 1 tsp oil
- 1/2 tsp garlic and ginger paste
- 1/2 tsp Ground black pepper
- 1/2 tsp chilli powder or smoked paprika powder
- 1/2 tsp soya sauce
- Salt - to taste
- 4 eggs boiled and peeled
- 4 - 5 large garlic cloves, finely chopped
- 2 large onions diced
- 1 green capsicum diced to medium pieces
- 1/2 red capsicum diced to medium pieces
- Cilantro or coriander leaves finely chopped
- 1 tsp soya sauce
- 2 -3 tbsp Tomato ketchup
- 1 tsp red chilli sauce
- 1 tsp Vinegar
- 1/2 tsp smoked paprika powder or chilli powder
- 1/2 tsp Black pepper powder
- 1 tsp ginger garlic paste
- 1 tsp sugar (optional)
- Salt - to taste
- Oil for cooking
- 1 tsp cornflour
- 1 cup water if you choose to make the gravy recipe
Instructions
- Peel the boiled eggs and cut them into four pieces.
- In a medium-sized bowl, add in the cornflour or all-purpose flour, soya sauce, vinegar, ½ ginger-garlic paste, smoked paprika or chilli powder, black pepper powder, and salt.
- Combine all these ingredients, add a little water slowly, and mix it to make a smooth batter.
- Now add the egg pieces into the batter, coating them well.
- Heat a pan and add in the oil to fry the coated eggs.
- Once the oil turns hot, drop in the coated eggs and fry them well until they are golden brown.
- Now in the same pan drop in the garlic and fry till golden brown.
- Add in the onions and sauté well on high flame for about two to three minutes till they turn translucent.
- Add in the ginger-garlic paste and mix well.
- Cook this on low flame until there’s no more raw smell.
- Drop in the bell peppers and cook for another two to three minutes.
- Add in all the sauces and mix well.
- Cook till all the vegetables are soft.
- Add salt, smoked paprika or chilli powder, and sugar.
- Add ground black pepper and mix.
- Cook on low flame for about another minute.
- Add water for gravy and stir.
- For gravy, cook it on high flame, and bring it to a boil.
- Mix 1 tsp of cornflour along with 2 tbsps. of water.
- Add the eggs, and cornflour and give it a good mix.
- Cook again for a few minutes and serve.
