  1. Wash the mutton pieces thoroughly and pat them dry. Then, coat them with marination ingredients such as turmeric, yoghurt and ginger garlic paste. Keep it aside and marinate for an hour.
  2. In a grinder, add coriander leaves, mint leaves, ginger and green chillies. Grind them thoroughly into a thick paste.
  3. Place a pressure cooker on medium heat and add oil to it. Once the oil is hot enough, drop finely chopped onions into it and let it cook. Then, add the whole spices and the pre-made green paste to the cooker. Stir fry this mix and add the marinated mutton pieces to it. Lastly, add garam masala and salt. Turn the flame to high and cook the mix for two to three minutes.
  4. Add water to the pressure cooker and let the mutton cook for about 3 whistles.
  5. Once the mutton is cooked properly, garnish it with coriander leaves. Serve it hot with naan, roti or ghee rice.

  1. You can use ghee instead of oil to get that rich flavour.
  2. You can use the same ingredients to cook Hariyali Chicken and simply replace chicken with the mutton pieces.
