Instructions
  1. Add the ginger, olive oil, shallots, lime zest, cooking salt and pepper to a bowl to prepare a marinade.
  2. Marinate the fish with half of this mixture and set aside the other half for serving.
  3. On medium-high heat, preheat a grill and use vegetable oil to brush the grates.
  4. Transfer the sea bass fish to the grill.
  5. Cook for about 5 to 7 minutes on each side.
  6. Drizzle the fish fillets with the reserved marinade and finish with a sprinkle of flaky sea salt and some olive oil.
