Kadai Gosht: Make an Authentic Mughlai Lamb Curry At Home
Ingredients
- 1 kg leg of lamb curry cut pieces
- 5 cloves garlic roughly chopped
- 1 ½ inch ginger roughly chopped
- 4 tbsp vegetable oil
- 500 gm Tomato thinly sliced
- 200 gm onions thinly sliced
- 1 ½ tsp Kashmiri chilli powder or mild paprika
- salt to taste
- 2 tbsp Greek Yoghurt
- 2 tsp coriander powder
- turmeric powder Pinch
- 1 tsp black cumin seeds coarsely crushed
- ½ tsp black pepper coarsely crushed
- ¼ tsp Garam masala powder
- 2 green chillies slit lengthwise
- 1 tbsp Coriander leaves chopped
- 1 tbsp Mint leaves chopped
Instructions
- Take the lamb pieces and add them to a mixing bowl. In a blender, add the chopped ginger and garlic. Blend it into a smooth paste. Add this paste to the mixing bowl. Coat the lamb pieces with this paste and set it aside for an hour.
- Take a heavy-bottomed large pan and heat some oil in it. Add the lamb pieces and fry them for 5-6 minutes. Then add the tomatoes and cook for 8-10 more minutes. Once the tomatoes start to soften, add the onions, green chillies and chilli powder. Stir the mixture. Add salt as required. Lower the heat and let the curry simmer for 30 minutes.
- Take a small bowl and add yoghurt to it. Then add coriander powder, turmeric powder, cumin, and crushed pepper. Give it a mix. On low heat, add the yoghurt mix to the curry and stir. Half-cover the lid and let the curry simmer for 45-50 minutes. Stir every few minutes to prevent the lamb pieces from sticking to the pan.
- Once the lamb pieces are cooked, add the garam masala and stir the curry. Garnish with coriander and mint leaves and serve hot.
