However, it is not known to a good number of the population as this type of kebab among many others has not been popularised as a street food yet. Many may mistake it to be the rather popular Galouti Kebab, which is a famous street food in Lucknow, now available in many other states as well. But what exactly is the Kakori Kebab’s History?
- Like many other kababs, the Kakori Kebab is also known to have originated in a town of Lucknow called Kakori.
- The super soft texture of this particular kebab was invented as the then King of the region was fond of kebabs, but unable to chew the meat much due to his old age.

Ingredients
- 450 grams of Licious Mutton Keema/Mince
- 1 cinnamon stick
- 5 green cardamoms
- 12 black peppers
- 5 cloves
- 4 dried red chillies
- 1 tsp Coriander Seeds
- 1 tsp Khus Khus
- 4 tbsp Raw Papaya paste
- 2 tbsp fresh cream
- 1 tsp cashew paste
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp onion paste
- ½ tsp Nutmeg powder
- 1 tsp Green Chilli chopped
- 4 tbsp Gram Flour roasted
- ½ cup Coriander leaves
- 5 tbsp oil
- 1 tbsp ghee
- ½ cup khoya powdered
- 1 tsp Kewra water
- Salt - to taste
- 1 piece charcoal
Instructions
- Heat a pan and add a cinnamon stick, green cardamoms, black peppers, cloves, dried red chillies, coriander seeds, and khus. Dry roast them and grind them into a powder.
- In a large bowl, add the minced mutton followed by the remaining ingredients, and mix them well. Ensure they are combined well and marinate for 4-6 hours.
- Dip skewers in water for about an hour and pat dry.
- Take little oil on your hand and pull out the portions of the mixture to form kebabs around the sticks.
- Heat a pan and fry the kebabs on each side till they are cooked nicely. Keep placing them in a big bowl.
- Once all kababs are made, heat a charcoal and place the charcoal in the bowl. Pour ghee over the charcoal and immediately cover the bowl with a lid for 10-15 minutes.
- Serve hot with mint chutney and onions.
