Mutta (Egg) Kebab

Ingredients
- 2 whole Eggs (hard-boiled and quartered/halves)
- 2 whole potato (boiled, peeled and mashed)
- 2 tbsp Oil/Butter
- 1/2 cup onion (finely chopped)
- 1/2 tsp Crushed Ginger & Garlic (or ginger garlic paste)
- 1 whole Green Chili (finely chopped)
- 2 twig Curry leaves (finely chopped)
- 1/2 tsp turmeric powder
- 3/4 tsp Chili Powder
- 1 tsp coriander powder
- 1/2 tsp Garam masala powder
- salt (to taste)
- 2 tbsp Cilantro (finely chopped)
- 1 whole egg (beaten)
- 3/4 cup Bread Crumbs / Rava
Instructions
- Heat oil or butter in a pan at medium-high heat. Add finely chopped onion, ginger, garlic, green chili, curry leaves and little salt.
- Cook until the onion turns light brown, add turmeric powder, chili powder, coriander powder, and garam masala powder. Saute until it loses its pungent smell.
- Add mashed potatoes. Mix well and cook for about a minute. Add cilantro and mix well and keep aside.
- Grease your palm with oil. Roll the potato mixture into medium-sized balls. Flatten it in your palms and place the sliced boiled egg in the centre. Shape into kebabs.
- One by one, dip the kebabs in beaten egg and roll in bread crumbs or rava. deep-fry on medium heat until browned. Serve with chutney or dip of your choice.
