  1. Wash and clean the mutton chops. In a bowl, add mutton chops, red chilli powder and salt. Mix the chops and let them marinate for 4 hours.
  2. After 4 hours of marination, add the chops to the pressure cooker. Then add cumin seeds, chopped onions and 1 cup of water. Let the chops pressure cook for 3-4 whistles.
  3. Take a blender and add onions and chilli. Blend them into a puree. Set them aside. Then add the tomatoes and puree them. Set aside.
  4. Take a pan and dry roast cumin seeds, black peppercorns, coriander seeds, dried red chillies and mustard seeds. Once they cool down, grind them into a fine powder.
  5. Take a pan and heat some oil in it. Then add the spices; cloves, cinnamon stick and bay leaf. Once they turn aromatic, add the onion and green chilli paste. Fry until it loses the raw smell. Then add the tomato puree. Once the oil starts separating on the edges, add powdered spices such as red chilli powder, turmeric powder, coriander powder and the dry spice mix. Add salt and cook the base.
  6. Add the mutton chops from the pressure cooker along with the residual water. You can add more water if required. Simmer the curry for 25 minutes. Serve hot.

The cooking time will depend on whether the chops are from a goat or a lamb. The lamb chops might take a little longer to cook.
