  1. Season the mutton chunks with salt, a tablespoon of ginger-garlic paste and papaya paste. In a bowl, combine yoghurt, turmeric, chilli powder, cumin powder, allspice powder, 2 tablespoons of tikka masala, salt, coriander leaves and lemon juice. Now add the mutton, mix well and rest it for about 30 minutes.
  2. In a shallow grill pan, heat oil and carefully place the marinated mutton pieces. Fry until the pieces are cooked through with some charred marks on them.
  3. In a wok, heat oil and add onion. Sauté until slightly browned and add the remaining ginger-garlic paste and red chilli paste. Sauté until aromatic and then add tomatoes along with the remaining tikka masala.
  4. Now, add the pan-fried mutton pieces and the leftover marinade. Cook for a couple of minutes.
  5. Garnish with fresh coriander and serve with hot naan, paratha or plain rice.
