Ingredients

Whole chicken about 750-800 grams.
Cut into joints. The carcass should also be included for flavour

turmeric powder

teaspoon
Kashmiri chili powder

Salt – to taste
Instructions
Combine ALL the ingredients in a heavy cast iron pan or a pressure cooker.
Leave to marinate for half an hour.
Place the pan with the chicken and marinade on high heat
Bring to a boil then reduce the heat till the chicken just simmers. Close with a tight-fitting lid.
If using a pressure cooker, close the lid without the weight.
Cook on a low heat for 45 minutes.
The chicken will cook in its own juices.
Turn off the heat and rest the chicken for 10 minutes.
Re-heat and serve with rice.
