Instructions
  1. Take a deep-bottomed pan or cooker and add ghee in it. Once it is hot enough, add the whole spices and fry them for a few seconds until they turn aromatic. You can lower the flame to avoid the spices from burning.
  2. Wash the meat and make it as clean as possible. Pat it dry. To the spice mix in the pan, add Kashmiri red chillies, cumin seeds, asafoetida, and fry for a few seconds. Once it turns aromatic, add the mutton pieces and stir well but gently. Cover the cooker with a lid and let the mutton pieces cook for 5-6 minutes on medium flame. As you see the mutton turning brown, remove the lid and add ½ cup of water. This will make the meat soft and succulent and help soak all the flavours of the spices. Lower the flame and let the mutton cook for 10-15 minutes.
  3. Take a bowl and add all-purpose flour in it. Then add the powder spices such as fennel powder, coriander powder, Kashmiri red chilli powder and the saffron milk. You can also add dry ginger powder; however, this is optional. Add the curd mix in the pan and stir it well. Let the mutton simmer in this mixture for a minute. Then, add 1 cup of water and slow cook the mutton for 1-2 hours. Keep stirring in intervals so that the mutton does not stick at the bottom.

Recipe Tip The traditional Kashmiri recipe uses the root of a plant called Ratan Jot. This root gives the dish its red colour along with Kashmiri red chillies. If you can find it, then you can heat 2 tablespoons of ghee and add a small piece of the root. As the ghee turns red, you can switch off the flame and pour this ghee over the dish.
