How to make a frittata?
Ingredients
  • 2tablespoons of extra virgin olive oil or vegetable oil
  • 100grams of boiled potatoes cut into cubes
  • cup ¾of cauliflower/broccoli florets
  • ½ de-seeded red pepper
  • 2 spring onions . You are welcome to use leeks as an alternativefinely cut
  • 50grams frozen or fresh green peas
  • 10grams feta cheesecrumbled
  • 6 eggs
  • Salt to taste
  • Black pepper powder to taste
Instructions
  1. Heat oil in a non-stick frying pan
  2. Add the potato cubes, cauliflower/broccoli florets, spring onions, and sauté gently for 5-7 minutes
  3. Keep stirring until the potatoes become brown and other vegetables turn tender
  4. Stir in the green peas, red pepper, and crumbled cheese and cook for another minute
  5. Break the eggs into a medium-sized bowl
  6. Add seasoning and whisk vigorously
  7. Pour the egg mixture into the pan to cover the vegetables evenly
  8. Shake the pan to have the eggs coat the tender vegetables
  9. Lower the heat and cook the frittata for 5 minutes until the egg is set
  10. Preheat the grill
  11. Place the hot mixture on the grill for 3-4 more minutes
  12. Gently loosen the sides of the frittata from the pan and slide it to a board
  13. Cut it into wedges and serve hot with a green leafy salad
