- 8 chicken tenders
- 1 beaten egg
- 2 tbsp Milk
- 1/3 cup flour
- ½ cup cornmeal
- ½ cup Panko breadcrumbs
- 1 tsp each of chilli powder onion powder, garlic powder and salt
- ½ tsp each of pepper smoked paprika and oregano
- ¼ to ½ tsp cayenne pepper optional

- Add chicken to a bowl with 1/3 cup flour and coat well. Tap any excess flour, dip the chicken tenders in the egg and milk mixture, and let the excess drip off. Then add the chicken to the breadcrumbs, cornmeal and seasoning mix.
- Heat oil in a large skillet over medium heat. Once hot, add the chicken tenders and cook well on each side for about three to four minutes or until the pieces are golden brown and crispy.
