- 6 tbsp butter
- 1 cup Chopped Onion
- 1 cup celery diced
- 1 cup Carrots finely chopped
- 4 minced garlic cloves
- 3 tbsp all-purpose flour
- 1 can evaporated milk
- 6 cups Chicken Stock
- 4 cups cooked and shredded chicken
- 1 tbsp tsp dried thyme or 1fresh thyme
- 2 tsp cracked black pepper
- Salt - to taste
- 2 cups all-purpose flour
- 1 tbsp Baking Powder
- 1 tsp cracked black pepper
- 1 tbsp tsp dried thyme or 1fresh thyme
- ¾ cup whole milk
- 4 tbsp butter melted
- 1 tsp salt

- In a large pot, melt the butter over medium heat.
- Add in the onions, celery, and carrots. Cook for five minutes until the vegetable wilts. Add the garlic and cook for an additional minute.
- Add in the flour and stir well to combine. Cook for one minute.
- Pour the chicken stock and evaporated milk and stir to combine well.
- Bring to a boil and add thyme, salt, black pepper and the shredded chicken. Let the soup simmer uncovered.
- In a large bowl, add the flour, baking powder, thyme, salt and pepper and whisk well. Make a well in the centre and pour in the butter and milk.
- With a rubber spatula or wooden spoon, stir the mixture to form a dough.
- Using a large cookie scoop, scoop out a portion of the dough and drop it directly into the simmering soup.
- Once you’ve dropped in all the dumplings, press them down gently so the soup runs over them.
- Cover the pot and lower the heat to allow the soup to simmer.
- Cook for about 15 minutes until the dumplings are cooked through. Make sure to stir the soup and dumplings gently at intervals.
