- 1 tbsp ghee or unsalted butter
- 12 oz mushrooms large and sliced
- ½ cup chicken broth
- 3 green onions chopped
- 2 garlic cloves minced
- Salt and pepper
- Parsley for garnish
- 700 gm Chicken Breasts boneless & skinless
- Salt and black pepper
- 1 tsp oregano
- 1 tsp Paprika
- 1 tsp coriander powder
- 2 tbsp olive oil extra virgin

- Cut the chicken breasts horizontally into two halves. Pat them dry and then sprinkle salt and pepper. Take a small bowl and add oregano, paprika and coriander powder. Mix the ingredients. Apply this spice mixture on both the sides of the chicken breasts. Heat a skillet and add some olive oil to it. Once the oil is simmering, add the chicken pieces and cook them for 3-4 minutes on each aside. Next, preheat the oven at 93-degree Celsius. Add the chicken pieces to a tray and keep them in the oven so that they are warm.
- Use the same skillet and add some butter to it. Also, drizzle a little olive oil. Add the mushrooms and cook them for 5 minutes. Then add the garlic and sauté for a minute. Add green onion and the chicken broth. Scrape up the brown bits at the bottom. Stir the mixture and season with salt and pepper. Bring the sauce to a boil. Then let the sauce simmer until it is a bit thick.
