- ¼ tsp Nutmeg
- 1- inch Cinnamon
- 4 cardamom
- 4 cloves
- 2 string mace
- 1 bay leaf
- 4 Dry Red Chilly
- 1 tsp Pepper Corns
- 3 tbsp Coriander Seeds
- 1 tsp fennel seeds
- 1 tsp Cumin seeds
- 2 onion medium-sized
- 10 - 15 cashews
- 8 - 10 almonds soaked and peeled
- 2 - 3 green chillies
- 1 kg chicken
- 2 - 3 tbsp Ghee/Clarified Butter
- 2 tbsp ginger garlic paste
- ½ tbsp salt
- ½ cup curd
- 1 tbsp Kasuri methi
- 2 tbsp fresh cream
- 2 tbsp coriander leaves, chopped

- Take a pan and add all the whole spices such as nutmeg, cinnamon, cloves, cardamom, mace, bay leaf, dry red chilli, peppercorns, coriander seeds, fennel seeds and cumin seeds. On medium heat, dry roast the spices until they turn aromatic. Switch off the flame. Let the spices cool down. Then put them in a grinder and grind them into a fine powder.
- Take a grinder and add chopped onions, cashews, almonds and green chillies. Grind them into a smooth paste.
- In a pan add ghee and heat it on medium flame. Then add ginger-garlic paste and sauté for a few minutes. Add the chicken pieces and sauté them. Close the lid and cook the chicken for 3 minutes on high flame.
- Add salt to the chicken and stir it. Then add the onion-cashew paste. Mix it well and close the pan with a lid. Let the chicken cook for 4-5 minutes on medium flame. Then lower the flame and add the yoghurt. Let it cook for 2 more minutes.
- Then add the masala powder and mix it well. Cover the pan and let the chicken cook for 5 more minutes on medium flame. Then add Kasuri methi and cook the chicken on high flame for 2 minutes. Add some fresh cream and serve.
Recipe Tip When you are making the onion and nuts paste, avoid adding any water. If you feel the gravy for the curry is thick then you can add water when it is cooking and adjust the consistency.
