- 125 grams of flat rice noodles
- 1½ tbsp tamarind puree
- 2 tbsp Fish sauce
- 3 tbsp brown sugar
- 1½ tbsp Oyster Sauce
- 150 grams of Chicken Mini Bites.
- 2 to 3 tbsp vegetable oil
- ½ sliced onion
- 2 finely chopped garlic cloves
- 2 lightly whisked eggs
- 1½ cups of beansprouts
- ½ cup firm tofu (cut into 1 ¼ sized pieces)
- ¼ cup garlic chives (cut into 1 ¼ sized pieces)
- ¼ cup finely chopped peanuts

- In a large bowl, place the rice noodles and pour boiling water over them. Soak the noodles for about five minutes. Drain and rinse under cold water.
- In another bowl, mix all the sauce ingredients and keep aside.
- In a large wok or skillet over high heat, heat 2 tbsp of oil and add the onion and garlic. Cook for about 30 seconds.
- Add the chicken bites and cook for about 1½ minutes, until the pieces are cooked well.
- Push the chicken to one side and pour the whisked eggs and scramble immediately. Mix the egg with the chicken bites well.
- Add the tofu, noodles, bean sprouts, and sauce.
- Toss everything well until the sauce is absorbed and mixed with the noodles.
- Add half the peanuts and the garlic chives and toss quickly. Remove from the heat.
- Serve hot. Top with remaining peanuts and lime wedges, and beansprouts on the side for the authentic Thai style!
