- 340 grams of Boneless Chicken Thighs
- 1 tbsp Oyster Sauce
- 1 tsp Corn Starch
- 3 tbsp water
- 1½ tsp oil
- 2 cups to 3of low-sodium chicken stock
- 1½ tbsp Soy Sauce
- 2 tsp dark soy sauce
- 1 tbsp Oyster Sauce
- 1½ tsp Sugar
- 1 tsp Sesame oil
- 1/8 tsp white pepper
- 4 cups broccoli florets
- 2 minced garlic cloves
- ¼ tsp Grated ginger
- 3 tbsp oil
- 2 tbsp corn starch mixed with 2 tbsp of water to form a slurry

- Begin by marinating the chicken. In a bowl, add the chicken thighs, oyster sauce, corn starch, oil, and water. Marinate the pieces well and set aside to marinate for about ten minutes.
- In another bowl, add the chicken stock, dark soy sauce, soy sauce, oyster sauce, sugar, white pepper, and sesame oil. Stir and set aside.
- In a wok, add the broccoli florets and blanch for about a minute or two. Drain and set aside.
- Dry the wok, and place it over high heat. Once smoking hot, add the oil and the marinated chicken thighs and sear the chicken until 90% done. Remove and set aside.
- In the same wok on medium heat, add another tablespoon of oil and ginger and garlic. Stir for about five seconds, and then add in the sauce mixture. With the spatula, stir the sauce around the sides to deglaze the wok. Let the sauce simmer.
- Now, add the corn starch slurry to the sauce mixture while stirring constantly. Allow the sauce to simmer for about ten to 15 seconds until the sauce gets thick.
- Add in the chicken and the blanched broccoli. Stir-fry well until the broccoli and chicken are well-coated with the sauce.
