- Licious Chicken Breasts
- 2 tbsp all-purpose flour
- 2 tbsp finely grated Parmesan cheese
- 1 tsp of salt
- Cracked pepper
- For The Sauce:
- 1 tbsp olive oil
- 2 tsp butter
- 2 tbsp minced garlic
- ¼ cup Chicken Stock
- 1½ cup half heavy cream you may also use evaporated milk
- ⅓ cup finely grated Parmesan cheese
- 2 tbsp capers you may use some more for garnishing
- 1 tbsp tsp cornstarch with 1water
- 2-3 tbsp Lime juice
- 2 tbsp fresh parsley

- Mix the flour and grated cheese in a small bowl. Rub the chicken breasts with salt and pepper, then coat them in the flour mix, shaking off the excess and setting them aside.
- In a large skillet, heat 1 tbsp oil and 2 tbsp butter over medium heat until the butter has melted and the pan is hot.
- Fry the chicken until it is golden brown on all sides, cooked through, and no longer pink (about 3-4 minutes. It will depend on the thickness of the chicken).
- Place on a heated platter.
- Fry the minced garlic until fragrant (approx 1 minute) in the pan (spray with a bit of oil if necessary).
- Reduce the temperature to low-medium and stir in the stock and cream.
- Put the sauce to a slow boil and sprinkle with salt and pepper to taste before adding the capers and parmesan cheese.
- Cook for another 2 minutes, or until the sauce thickens. (If the sauce is just too watery for you, add the cornstarch and water combination to the middle of the pan and quickly stir it into the sauce.) It will instantly start to thicken).
- Put in the lemon juice and cook for another minute to blend. Add the chicken to the pan and let it simmer in the sauce for almost a minute to absorb the flavours.
- Serve with spaghetti, steamed veggies, rice or zucchini noodles. Garnish with more capers, parsley and lemon slices.
