- 5 Licious Classic Eggs
- 2 tablespoons oil
- 2 teaspoons ginger finely chopped
- 2 teaspoons garlic (finely chopped)
- 2 tomato chopped
- 2 green chilli finely chopped
- 1 teaspoon Cumin seeds
- 1/2 teaspoon turmeric
- 1 teaspoon coriander powder
- 2 onion finely chopped
- 2 Capsicum chopped
- Coriander leaves
- 1/2 tablespoon Asafoetida hing
- 1 teaspoon red chilli powder
- 1 teaspoon Garam masala powder
- 1 tablespoon Green chutney
- Salt - to taste
- 4 tablespoons butter
- 8 Bread Slices

- Heat oil in a pan. Add the cumin seeds with asafoetida. Let them splutter
- Add chopped onion and green chilli
- Sauté for 1 minute. Add the tomatoes & capsicum
- Mix thoroughly. Sauté for 5 minutes
- Add all the spices. Stir until everything is mixed evenly
- Add the whisked eggs slowly, stirring them with a spatula
- Scramble thoroughly until the vegetables and spices are mixed
- Season with salt
- Sprinkle coriander leaves on top
- Assemble the sandwiches
- Spread butter on one slice of bread
- Add a tablespoon of egg bhurji on top
- Spread green chutney on another slice of bread. Cover the bhurji
- Repeat for all other slices
- Serve hot
