- Wash and pat dry the chicken. Add the chicken to a large bowl along with onion, garlic, salt and pepper. Combine well and in another bowl, whisk together eggs and milk. Pour this mixture over chicken and let it rest for about 20 minutes.
- Add oil into a deep bottomed pan and let it heat until hot enough for frying. In a small dish, mix flour, pepper, salt, oregano, paprika and chilli powder. Remove the chicken from the marinade and drain completely. Dip the chicken in flour mixture, then in the egg mixture and finally in the flour mixture.
- Once the oil is hot, drop the chicken carefully and fry for 7-9 minutes until golden brown. Remove and drain on a wire rack over kitchen tissues. Place the drained chicken on a wire rack in a baking tray and put it in a preheated 200° C oven for it to stay warm.
- Garnish with coriander leaves and lemon wedges. Serve with your favourite sauce.
Recipe Tips
If you're planning to serve the chicken a day or half a day later, then for reheating, bake it at 300° C for about 45 minutes.
