- 4 pieces Eggs
- 4 pieces chicken frankfurters sliced
- ½ piece red pepper cubed
- Salt and pepper to taste
- 4 tbsp butter
- ¼ cup chopped green chillies
- ¼ cup Chopped fresh cilantro for garnish

- Crack the eggs in a bowl, add salt, pepper and oregano, pepper and whisk until everything is well combined.
- Chop the chicken frankfurters into discs and then fry them in some butter in a frying pan.
- Melt the remaining butter in the same nonstick pan over medium heat and make sure to coat the entire pan with butter.
- Pour the whisked eggs into the omelet pan and spread it out evenly.
- As the eggs begin to set, add the fried frankfurters and peppers to cover half the omelette. You could also add cheese and jalapenos for some heat.
- Once the omelette is fully set, fold it to cover the toppings, gently remove it onto a plate and serve hot with some buttered toast for a delicious breakfast.
