Heat oil or butter in a pan at medium-high heat. Add finely chopped onion, ginger, garlic, green chili, curry leaves and little salt.
Cook until the onion turns light brown, add turmeric powder, chili powder, coriander powder, and garam masala powder. Saute until it loses its pungent smell.
Add mashed potatoes. Mix well and cook for about a minute. Add cilantro and mix well and keep aside.
Grease your palm with oil. Roll the potato mixture into medium-sized balls. Flatten it in your palms and place the sliced boiled egg in the centre. Shape into kebabs.
One by one, dip the kebabs in beaten egg and roll in bread crumbs or rava. deep-fry on medium heat until browned. Serve with chutney or dip of your choice.
