- ¼ tsp turmeric powder
- 1 tsp red chilli powder
- 1½ tsp coriander powder
- ½ tsp Cumin Powder
- 3 tsp Yoghurt
- 2 medium-sized white onion chopped
- 3 green chillies sliced
- ½ ginger chopped
- 500 gms Mutton Liver cleaned and chopped, small pieces
- 3 green cardamoms
- 3-4 cloves
- 2 Small Cinnamon Sticks
- 8-10 black peppercorns
- 1 tsp Kashmiri chilli powder
- ½ tsp Kasuri methi crushed
- 1 tsp Garam masala powder
- Coriander leaves
- 1 cup water
- Cooking oil
- salt to taste

- Remove the thin membrane present on the liver and cut it into bite-size pieces. Wash the pieces thoroughly and transfer them to a bowl. Now, add the marination ingredients such as red chilli powder, turmeric powder, coriander powder, cumin powder and yoghurt. Mix everything well and let the liver pieces marinate for 30 minutes.
- In a grinder, add chopped onions, green chillies, garlic cloves and ginger. Blend these ingredients into a thick paste.
- Place a deep-bottomed pan on medium heat and add oil to it. Once the oil is hot enough, add the whole spices along with the onion-chilli paste. Stir fry until the paste becomes slightly brown. Turn the flame to low and add the marinated liver pieces to the pan. Mix well and add Kashmiri chilli, garam masala and Kasuri methi and salt. Give it a good stir and let it cook for 3-5 minutes. Lastly, add water to the pan and cover it with a lid. Let the curry simmer for 10-15 minutes.
- Garnish it with finely chopped coriander leaves and serve it hot with roti or steamed rice.
