An Easy yet Delicious Recipe for Peanut Butter Chicken
Chop the chicken thighs into bite-sized chunks and marinate them with soy sauce. Meanwhile, in another bowl, whisk together all the peanut butter sauce ingredients.
In a large, non-stick pan, heat oil over a medium-high flame and add the chicken along with soy sauce marinade into the pan. Stir the chicken around so that it is in a single layer and let it cook for about 5-6 minutes. Then flip the chicken pieces over and let them cook for another 5-6 minutes.
Add the onion and let it cook for 2-3 minutes until it turns translucent. Add garlic, ginger and cook for another minute. Now, pour the peanut butter sauce and let it cook for another 3-4 minutes until it starts to thicken.
Top with minced coriander and serve hot with steamed rice or cauliflower rice.
