  1. Wash the chicken thoroughly and place it on the chopping board. Cut the chicken in the middle of the breast. In a bowl, mix all the herbs and spices well.
  2. Place the chicken in a baking dish and rub the spice mix on the chicken generously. Also, apply the mixture inside the portion that you had cut. Wrap the baking dish with the chicken using a plastic wrap and refrigerate overnight.
  3. Place the wood chips in the grill tray. Now, place the chicken on the grill and cook for about an hour and 20 minutes. Cover the chicken to give it a smoky flavour. Flip the chicken to the opposite side after 30 minutes. Use a kitchen thermometer to check the internal temperature of the chicken, which should be around 73-74° C.
  4. Rest the chicken for 10 minutes and then serve with stir-fried carrots and green beans.
